Summer Yummin'

One of my childhood memories in Mexico was of the Paleta man (Popsicle man) ringing his bell and pushing his cart, selling delicious Paletas.  Mexican paletas aren't just popsicles, they are made with fresh fruit and when you bite into them, it's like biting into the fruit itself...but way better.  I love making paletas all year round, but especially in the summer time.  If I was to pick an all time favorite it would be a Paleta de Limon, or a Lime Paleta  (Popsicle).

Lime Paletas (Popsicles)

Makes 8-10 

Ingredients

2
cups water
 cup sugar
3
(1-inch) strips of lime zest
¾
 cup freshly squeezed lime juice
Optional= If you don't want them as tart mix a package of lemon-lime kool-aid with 1 cup sugar, then add 2 Tbs. of the sugar/kool-aid mix in step 1.



Little helpers can help squeeze the limes!

Directions

  1. Combine the water, sugar, (optional kool-aid sugar), and lime zest in a saucepan. Cook, stirring, over medium heat until the mixture comes to a boil and the sugar has dissolved. Let cool to room temperature. If you want you can strain out the lime zest or leave it.  Stir in the lime juice.
  2. If using molds, divide the mixture among the molds, snap on the lid, and freeze until solid, about 5 hours. If using glasses or other unconventional molds, freeze until the pops are beginning to set (1½ to 2 hours), then insert the sticks and freeze until solid, 4 to 5 hours.
